95 HCU (~34 SRM)
Bitterness: 24 IBU
OG: 1.050 FG: 1.016
Alcohol: 4.4% v/v (3.4% w/w)
Water: set up HLT the night prior and treat water with 4 campden tabs to de cloramine. Add 4 tbs of Gypsum to 14 Gallons of declormined water.
Grain: 14 lb. American 2-row
2 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
2 lb. 0 oz. American chocolate
6 oz. Roasted barley
Mash: 70% efficiency
Mash in at 149-150 dF with 6.3 gallons of water at 162 dF. Hold for 1 hour or till conversion.
Boil: 90 minutes SG 1.044 12 gallons
1 lb. Lactose
Add Lactose at kettle knock out
Hops: .5 oz. Willamette (5% AA, 90 min.)
1 oz. Nugget (12% AA, 45 min.)
Yeast: Wyeast 1084 Irish Ale in 1 Qt Starter
