Single infusion mash. 6.5 Gallons water @ 168 degrees F for a mash temp of 152 degrees F. Hold for 90 Minutes and sparge to collect 11.5 gallons of wort | ||||||

First Wort Hop with 1 oz Cascades. Irish Moss 15 minutes prior to knock out |

Yeast: | Wyeast Northwest Ale XL Pack stepped up into 2 quart starter. Split half to each batch. | |||||
Log: | All went well untill draining the kettle. Plastic tubing works best to suck all the wort out of the kettle. Lost about 2 gallons to the kettle. Will bottle the small half of the batch for competition if it is good. Beutifull smell from the fermentors. Racked to secondary on 4 October. 1 week and 2 days in Primary. Looks clear but could use some time to clarify. Debating whether to dry hop. turned fridge down a couple degrees holding at about 66 deg F |

Carbonation: | Primed bottles with 3 primetabs per bottle on half the bottles and 2 per bottle on the other half. 5 Gallons kegged @ 10psi |
