Grain: 6 lb. German Pilsner
11 lb. German Munich
1 lb. Belgian CaraMunich
Mash: 75% efficiency
Mash in at 130° . Pull 1/2 thickest mash, raise to 158°, and hold for 20 Min. Raise to boil and hold for 30 Min. Add back to main mash to raise temp to 154°. Hold until conversion. Pull 1/3 thinest mash and boil for 20 Min. Add to main mash to raise temp to 165°. Sparge to collect 10 gallons.
Boil: 120 minutes SG 1.050 10 gallons
Biol for about 2 hours to reduce volume to 6 gallons. Add fist hops with 60 min to go and second hols with 20 min to go.
Hops: 2 oz. Hallertauer Hersbrucker (3.6% AA, 60 min.)
1 oz. Hallertauer Mittelfruh (3.8% AA, 20 min.)
Yeast: Wyeast Bavarian Lager
Log: Primary Ferment: 2 weeks @ 50°
Secondary: 3 months @ 32°
Carbonation: 2.5 volumes Keg: 12.3 psi @ 40°F
